Simmered Oyster with White Miso

 Ingredients for 2-3 servings
  • Oyster: 6 pieces
  • Soup stock: 300cc
  • White miso: 125g
  • Sugar: 6g(table spoon ½)
  • Ginger: 5g

  • Yuzu: appropriate amount


    Preparation for Oysters

    -Boil the oysters once, then rinse with ice water.
    - Cut the ginger fine like a needle.
    -Cut the yuzu rind into 2-3 mm pieces


    1. Place all the ingredients except the oysters and Yuzu in the kakugama over high heat.

    2. Once it boils, put the prepared oysters into the kakugama with the inner lid (wooden) and simmer for 1 minute over medium heat.

    3. Turn off the heat and allow to steam for 5 minutes.

    4. Arrange on a plate and garnish with the prepared ginger and yuzu rind.
